pumpkin protein pancakes - recipe

Alright, alright - here it is - my Pumpkin Protein Pancakes recipe. This is a great way to get in your morning healthy carbs, along with your protein - plus something enjoyable for you to eat and keep your diet interesting! I always preach about keeping your diet interesting otherwise you'll get bored and lose sight of the reason why you're eating healthy to begin with. So change it up, get creative in that kitchen - you'll be glad you did!

Pumpkin Protein Pancakes

 
Pumpkin Protein Pancake Recipe from NPC Bikini Competitor Nicole Markovic Kubon
 
 Ingredient List
 1 scoop of vanilla protein powder
 1/2 can of 100% pure pumpkin puree (try to find organic if possible)
 1/2 cup of liquid egg whites
 a pinch of cinnamon
 a pinch of nutmeg
 
Additions you can add: chopped almonds, Waldens Farms Pancake Syrup, Waldens Farms Chocolate Syrup,  Splenda/Stevia, Bananas, Apples, Fat Free Whipped Cream, Dark Cocao Chocolate Chips
 
 Directions
Spray a frying pan or griddle lightly with your choice of oil (I use Canola or Olive), scoop a generous amount of pancake mix onto your pan creating small circles. You can make them as small or large as you'd like, just remember the cooking time varies based on that size you choose. :)
 
Let each pancake cook through thoroughly, approx 3 min on each side on medium heat. These store well in the refridgerator and you can eat these throughout the week with your meal planning.
