Let's talk about my mornings for a moment. Typically my mornings are absolutely crazy, filled and honestly a rush. I love to sleep, so I try to get in as much sleep as possible, but let's face it during the week - Mon, Tues and Wed mornings I have my daughter whom I have to get ready and bring to daycare or to her dad an hour away, then I have morning cardio sessions and have to battle traffic to get to work by 8:00am - so needless to say cooking breakfast every morning is out of the question. I've found an easy solution though nonetheless that won't fill your refrigerator or freezer up with countless tupperware containers and instead will only utilize maybe 1 or two - or even just a ziploc bag. :) Egg White Squares - enjoy!

Veggies of choice
Pre-heat your oven to 375 degrees. Lightly spray a muffin or cornbread pan with your favorite cooking oil.
Pour in your egg whites to the amount that you need per your diet. For me I filled up each square about half way and that equaled 3/4 cup of egg whites (4 eggs) and so each morning I would have two squares. After pouring in your egg whites add your veggies to each square. I added just spinach this go round. Lastly, add any seasonings you may like, I added pepper.
Once you've filled all of your squares place the pan in your oven for approx. 22-25 minutes. Be sure you check that the eggs aren't runny before pulling the pan out and if they are adjust the time accordingly. Your egg whites should form mini-squares/muffins and easily pop right out.
Store in a container or ziploc bag in your refrigerator and in the morning place in the microwave for approx. 30-45 seconds. You can also freeze these, however, you will need to adjust your microwave time accordingly. Now you're well on your way to time saving in the morning - ENJOY!! <3 Nicole
